To mark the viewing of the Health and Safety DVD within the design department, I made emergency first aid cupcakes. They of course had to be chocolate, as chocolate is always required in an emergency. I topped them with chantilly cream, which I re-christened ‘chant-be-ill’ cream! Finally the first aid red fondant cross was the icing on the cake.
2oz Golden Caster Sugar
2oz Self Raising Flour, sifted
2 Tablespoons Cocoa Powder
300ml Double Cream
2 Tablespoons of Icing sugar, sifted
Red Fondant Icing
Preheat the oven to 180C/gas 4. Place all the cupcake ingredients, in a bowl and mix together with an electric beater until smooth and fluffy.
Spoon the mixture into mini cake cases set in a mini muffin tin. Bake for 10 minutes or so, until risen and firm to the touch. Leave to cool.
To make the Chantilly cream, whip the cream and icing sugar together and spoon or pipe on top of each cupcake.
Roll out the red fondant icing and cut into your first aid crosses. Finally place these on to each cupcake and enjoy your very own piece of TLC.
