Brilliant Butter Cookies
113/4oz golden caster sugar
1 egg, beaten
Few drops of vanilla extract
255g/9oz plain flour
To make the Cookies
Cream together the butter and sugar, then gradually beat in the eggs and vanilla extract.
Sift and stir in the flour and mix to a fairly soft dough.
Turn onto a lightly floured surface and knead gently.
Cover or wrap the dough in cling film and chill for at least an hour or preferably overnight.
When ready, roll the dough out on a lightly floured surface to around 2mm thick. Cut into shapes with your cookie cutter of choice.
Place the cookies on un-greased baking sheets roughly 2cm apart and bake in a pre-heated moderately hot oven 180C/Gas 5, for approx 10 minutes or until very lightly golden in colour.
Once out of the oven leave them on the baking sheets for a few minutes and then transfer to a wire rack to cool.
