
My British Egg (aka Broody Hen!) is a twist on the Scotch Egg, using chicken instead of pork to play on the idea of “what came first the chicken or the egg?” The egg and chicken filling is surrounded with a shell of shortcrust pastry instead of breadcrumbs that is then baked with an egg wash glaze instead of deep fried. Sitting on an edible nest of cheese straws and rocket, the cheese straws can be dipped in an egg cup full of lemon and parsley mayonnaise like soldiers. Attention, there’s a broody hen ready to be cracked into and eaten either round the table or put into an empty egg box and enjoyed as part of an Easter picnic.
