Frances' Marmalade Muffins
These marmalade muffins were made especially for the lovely Miranda as it was her birthday last week. They can be enjoyed as a breakfast treat or in the afternoon with a compulsory cup of tea of course. I also like to serve them with my lemon curd yogurt, which is basically a mixture of natural yogurt and lemon curd, or orange curd if you have any.

7oz Plain Flour
1oz Ground Almonds
1 tablespoons Baking Powder
1 teaspoon Bicarbonate of Soda
1 teaspoon Salt
3oz Golden Caster Sugar
2oz Butter, melted and cooled
1 Egg Beaten
200ml of Milk
Juice and Zest of 1 Whole Orange
2oz Marmalade

Preheat the oven to 180C/gas 4. Sift the dry ingredients into a large bowl and mix together with the sugar. Beat together the cooled melted butter, egg, milk, orange zest, juice and a tablespoon of the marmalade together. Now pour this wet mixture into the dry ingredients and fold together lightly until just combined. Spoon the mixture into 12 paper cake muffin cases set in a muffin tin, adding a teaspoon of the marmalade in the middle of filling them up with the muffin mix. Bake for 15 minutes or so, until risen and firm to the touch. Once out of the oven brush with the remaining marmalade to create a orangey glaze, now leave to cool or enjoy while still warm.
