Are you a little bit mad about Marmalade? If so the first every National Marmalade Week is taking place from Saturday 25th February until Saturday 3rd March. The week will celebrate all things marmalade and will kick off with the quintessentially British Marmalade Awards & Festival at the historic Dalemain Mansion in Cumbria on Saturday and Sunday.

Frances made a wonderful Giant Toast & Marmalade Cake. Carefully cut the shape of a slice of toast from a traditional sponge. Place the slice, sponge side up under the toaster to achieve a golden and crisp colour and texture. Once it cools proceed to spread over butter cream and a liberal coating of Marmalade. The only thing left to do is decide which way to cut the slice, diagonally or straight? Either way tastes good, especially with a cup of tea.
