3 recipes for the best BBQ ever

We just love this time of the year. As the evenings start stretching out later and later, we’re constantly planning our next barbecue. So get that barbecue fired up and ready with these tasty BBQ recipes.


Smoky Aubergine Dip

Spread this on your flatbreads, use it as a dip or serve it alongside some lamb skewers, this will soon be your go-to dip.

Prep Time: 10 minutes
Cooking Time:
25 minutes

You’ll need:

2 aubergines

2-4 tablespoons of Greek yoghurt

1 garlic clove

Sprinkle of lemon juice

Handful of pine nuts (optional)

1. Slice two aubergines to about 2cm thick and grill for 25 minutes until soft – you might need to turn them over halfway through.

2. Leave them to cool and then roughly mash them with a fork until it looks like a pulp.

3. Mix with some Greek yoghurt, one crushed garlic clove and a sprinkle of lemon juice. If you’re feeling fancy, toast some pine nuts to top the dip and serve.

Scrummy corn on the cob

Corn on the cob with a herby butter twist?  Say no more.

Prep Time: 10 minutes

You’ll need:

4 corns on the cob

100g salted butter at room temperature

Black pepper

1 crushed garlic clove

Grated zest of 1/2 lemon

2-3 tablespoons of the chopped fresh herb of your choice (we like parsley or coriander)

1. Wrap the corn in foil and cook on the hot barbecue for 30-40 minutes until tender. For the last 10-15 minutes, remove the foil to give them a charred smoky finish.

2. Whilst the corn is cooking, mix together all the ingredients for the butter and pop it in the fridge until you’re ready to eat. This can also be done up to a day ahead.

3. Once the corn is cooked, spread your herb butter mix over the corn so it melts. Serve hot.

Prep Time: 5 minutes
Marinade Time: 
2 hours minimum
Serves: 6-8

You’ll need:

1/2 cup water

1/4 cup Worcestershire sauce

1/4 cup soy sauce

2 tablespoons mustard

1 tablespoon minced onion

1/2 teaspoon minced garlic

1/4 teaspoon chilli flakes

Mix all the ingredients together in a bowl and marinade your meat of choice (chicken, pork, steak) for a minimum of two hours. Enjoy!
