No matter who you’re spending Valentine’s Day with this year, you just can’t beat a good picnic. This deliciously gooey, nutty and chocolatey loaf cake is perfect for packing up in your picnic hamper and sharing with your nearest and dearest. And with no decoration needed, you don’t have to worry about wrestling with a piping bag in the early hours of the morning (yes, we’ve been there).
100g caster sugar
50g soft brown sugar
100g unsalted butter
1 large egg
100g dark chocolate
4-5 very ripe bananas, mashed
60ml milk
200g plain flour
½ teaspoon salt
1 teaspoon bicarbonate of soda
100g walnuts, chopped
Preheat the oven to 180C/GM4
Grease a 20cm x 10 cm loaf tin with butter
Bring a saucepan of water to the boil and melt the chocolate in a glass bowl over the pan
In a large mixing bowl, beat the butter and sugars together until light and creamy
Add the egg, banana, milk and melted chocolate and mix until well blended
In a separate bowl, mix the salt, bicarbonate of soda and flour
Fold the flour mixture and half (50g) of the chopped walnuts to the wet mixture until well combined
Pour the mixture into your greased loaf tin and sprinkle with the remaining chopped walnuts
Bake for 50-65 minutes, until a skewer or cocktail stick inserted into the centre of the cake comes out clean
Leave to cool before slicing. Enjoy!
