A Wimbledon Cocktail: Strawberry and Pepper Ginbledon

Wimbledon is finally back and it’s in full swing. We haven’t been lucky enough to be at the tournament this year so we’re watching from afar, with good food and drinks to hand, of course. With over 28,000kg of strawberries consumed at Wimbledon each year it seemed fitting to create a drink made with the most British of berries.

The strawberries for this cocktail are baked in the oven, as like most fruit, adding heat creates a whole new level of intense flavour, making it the base for a perfect summer cocktail. Who knows, we might even get some sun to go with it too? Might.

You will need:

(Serves 2)

400g fresh strawberries

50ml dry gin

2 tbsp caster sugar

1 tsp vanilla extract

Juice of 1 lime

Pinch of sea salt

A good pinch of ground black or pink pepper (or both)

A few basil leaves

Tonic water

Ice

To make:

  • Preheat the oven to Gas 5/170F/190C
  • Wash, hull and slice the strawberries in half, place in an ovenproof dish and scatter with sugar, vanilla and salt.
  • Cook for around 20 minutes until soft.
  • Carefully place the strawberries along with the juice that’s gathered in the tray into a blender, or jug if using a hand blender, and liquidize. Taste and add a little more sugar if necessary.
  • Add the gin, lime juice and basil and blitz again.
  • Transfer into two glasses filled with ice, top with tonic, stir well and garnish with a good sprinkle of freshly ground pepper.
