We’re nothing if not optimists, we British. Famous for many things, but good weather is not one of them. Yet even on the greyest of days, there’s magic to be found outdoors. So join our gang of ‘forever weather optimists’, pull on your waterproofs and wellies and get outdoors. Load a flask with one of these simple and delicious soups for a warming mid-stroll pick-me-up.
A knob of butter
500g carrots
3 spring onions
A pinch of chilli flakes
1 clove garlic
3cm piece of ginger
Salt & pepper
500ml vegetable stock
400ml tin coconut milk
A handful fresh coriander
METHOD:
Chop all your ingredients. Keep a small handful of spring onions aside for garnish.
Melt butter in a large nonstick pan.
Add carrots, spring onions, ginger, chilli and garlic to the pan, season well and add 2tbsp water. Cover and cook on a low heat for 10 mins to soften the veg.
Add veg stock, cover and simmer for a further 15 mins.
Stir in the tin of coconut milk and simmer for a further 5 mins.
Take off the heat and whizz in a blender until smooth.
Serve topped with a handful of fresh coriander and remaining spring onions.

3 rashers bacon
3 leeks, washed and trimmed
4 potatoes
Salt & pepper
1L vegetable stock
142ml pot single cream
METHOD:
Chop your onion, leeks and potatoes. Use scissors to snip bacon into small pieces.
Melt butter in a large nonstick pan.
Fry bacon and onion until they start to brown. Keep aside some bacon bits to garnish.
Add leeks and potatoes, stir well and cook on a low heat covered for 5 mins. Stir every couple of mins to avoid the veg sticking.
Add your stock and season well. Simmer for 20 mins.
Take off the heat and whizz in a blender until smooth.
Pour in the cream once blended and give it a good stir.
Serve with bacon bits scattered on top.
