Picnic pinwheels for all the family

Summer cooking and eating should be as easy as possible. A bank of non labour-intensive quick and easy recipes means less time spent in the kitchen and more time where you should be; on a sun lounger. This hot spell isn’t going to last forever you know.

Quick food doesn’t mean that taste and quality needs to be sacrificed. We’ve teamed up with our friends at Higgidy Pies to bring you a teatime or summer picnic food idea that’s ready in no time.  Made with shop bought puff-pastry, everyone’s favourite kitchen cheat go-to, it’s a true minimum effort crowd pleaser.

Ingredients:

500g all butter puff pastry
200g full fat cream cheese
60g freshly grated Parmesan (plus a little extra for topping)
200g thinly sliced honey roast ham

Recipe:

  1. Preheat oven to 200°C/fan 180°C/gas mark 6
  1. On a floured surface roll out the puff pastry into a 20cm x 35cm rectangle, about 5mm thick.
  1. Mix cream cheese and parmesan together. Spread the cheese mixture evenly over the pastry, lay the ham over the top.
  1. Starting at the long edge, roll up into tight sausage shape. Cut in half and wrap each half in cling film. Chill for 20 minutes.
  1. Unwrap and using a sharp knife cut into 1.5cm pieces. Place at intervals on a lined baking sheet. (Brush with beaten egg, sprinkle with grated Parmesan).
  1. Bake for 18-20 minutes until golden.
